Garda DOC WHITE SPARKLING WINE Extra Brut CLASSIC METHOD
PRODUCTION AREA : Morainic hills south of Lake Garda, municipality of Cavriana, Campagnolo area.
SOIL TYPE: Morainic, sandy-pebbly, slightly calcareous.
ALTITUDE above sea level: 150-180 m.
TRAINING SYSTEM: Guyot.
AGE OF THE VINES : 5 years, yield per hectare 90-100 quintals.
GRAPE VARIETIES: 100% Chardonnay
HARVEST : Manual in crates in the third week of August.
VINIFICATION : Soft pressing of the whole grapes, fermentation in steel at a temperature of 14-16°, racking and refinement on fine lees for 8 months, with periodic batonage.
REFERMENTATION: Bottled (tirage) in the spring following the harvest, refermentation in the bottle with selected yeasts, and aged for at least 40 months before manual disgorgement. Released after 2 months.
ANALYTICAL DATA: Alcohol: 12.5% vol.Total acidity: 6.7 – 6.9 g/l pH: 3.08 – 3.10Residual sugar: Approximately 4 g/l
COLOR: Pale yellow with greenish reflections. Fine and persistent perlage.
BOUQUET: Broad and delicate, with fragrant hints of tropical fruits, yeast and bread crust.
FLAVOR: Fresh, dry, pleasantly harmonious. The finish is delicate, slightly fruity, and savory.
