Garda DOC CHARDONNAY - Disidoro
PRODUCTION AREA: Morainic hills south of Lake Garda, municipality of Cavriana, Campagnolo area.
SOIL TYPE: Morainic, sandy-pebbly, slightly calcareous.
ALTITUDE ABOVE SEA LEVEL: 150-180 m.
TRAINING SYSTEM: Spurred cordon and Guyot.
AGE OF THE VINES: 40 years, yield per hectare 50-70 quintals.
GRAPE VARIETIES: 100% Chardonnay
HARVEST: Manual in crates in the first week of September.
VINIFICATION: Soft pressing of the whole grapes, fermentation partly in steel and partly in wood, aging on fine lees for 8 months, with periodic batonage.
BOTTLING: in the spring following the harvest, released for sale after 1 year of refinement in the bottle.
ANALYTICAL DATA: Alcohol: 13.5% vol. Total acidity: 6.0 – 6.2 g/l pH: 3.22 – 3.26 Residual sugar: Approximately 4 g/l
COLOR: Straw yellow with greenish reflections.
FRAGRANCE: Intense and persistent with fragrant hints of apple and tropical fruits.
TASTE: Balanced, well-structured, pleasantly harmonious, with good flavour and a persistent finish.
