Garda DOC MERLOT - Liù
PRODUCTION AREA: Morainic hills south of Lake Garda, municipality of Cavriana, Campagnolo area.
SOIL TYPE: Morainic, sandy-pebbly, slightly calcareous.
ALTITUDE ABOVE SEA LEVEL: 100-130 m
TRAINING SYSTEM: Guyot.
AGE OF THE VINES: 5-20 years, yield per hectare approximately 50 quintals.
GRAPE VARIETIES: 100% Merlot.
HARVEST: Manual in crates at the end of September - October.
VINIFICATION: Selection of the finest bunches and over-ripening of the grapes on the vine. Submerged cap fermentation for approximately 10 days, followed by maceration for approximately 2 weeks. After racking, natural malolactic fermentation takes place. Aged for 12 months in French oak barrels.
BOTTLING: In the second year following the harvest, released for sale after 12 months of rest in the bottle.
ANALYTICAL DATA: Alcohol: 14% vol. Total extract: 36.0 g/l Total acidity: 5.7 – 5.8 g/l pH: 3.60- 3.65 Residual sugar: Approximately 3.5 g/l
COLOR: Bright ruby red.
AROMA: Delicate, with aromas of ripe red fruit, notes of jam, and pleasant hints of cocoa and licorice. Complex and delicately spicy.
FLAVOR: Full-bodied and enveloping with soft, well-balanced tannins. Pleasantly fresh and long-lasting.
