ORIGIN OF THE NAME : From the Latin proximus; sign: next, closer, following.

LOCATION OF OLIVE GROVES : In the municipalities of Gargnano on the western coast of Lake Garda and Cavriana on the morainic hills to the south of the lake.

HEIGHT ABOVE SEA LEVEL : 60 and 250 m.

OLIVE VARIETIES : Mixed varieties

FARMING SYSTEM : Traditional and super intensive system.

HARVEST PERIOD : Early November - mid-November.

HARVEST METHOD : Manual harvesting with a brush using a step and sheets spread on the ground. DELIVERY : Within 24 hours of harvest, in ventilated crates.

PRODUCTION CYCLE : Continuous with cold extraction (temp < 27° C).

COLOR : Yellow with light green reflections.

FRAGRANCE : Delicate and elegant, with herbaceous and fresh almond notes.

FLAVOR : Elegant, with vegetal notes. Pleasantly bitter, with a sweet and balanced finish.

AVERAGE ANALYTICAL DATA : Acidity: 0.20 - 0.30% Peroxides: 6.0 - 8.0 meq of O2/kg Total polyphenols. 450 – 500 mg/kg
